Join us at Antoniās Italian CafĆ© for a dish thatās as cozy as your favorite sweater: Pan-Seared Puppy DrumĀ nestled over a velvety purĆ©e of sweet potatoes, roasted garlic, and sage, paired with a vibrant salad of wild arugula, marinated cherry tomatoes, asparagus, red onions, and sesame seeds, all kissed by a gochujang vinaigrette.
š¶ļø Whatās gochujang?Ā This Korean chili paste brings a sweet, spicy, and umami-rich punch, with hints of molasses and smokeāa perfect contrast to the earthy sweetness of the purĆ©e and the peppery greens.
š· Wine pairing tip: Weāre spotlighting two stellar options this weekend:
Ceretto ArneisĀ ā A northern Italian white with stone fruit, almond, and floral notes, offering a soft counterpoint to the vinaigretteās heat and a graceful match for the fish.
