We’re jumping into the weekend with a dish that’s bold, bright, and totally crave-worthy: Pan-Seared Fresh Redfish served with Crispy Kale over a Creamy Polenta infused with sage, chive, and guanciale. That last ingredient—guanciale—is a true Italian treasure. If you’re not familiar with guanciale, it’s the unsung hero of Italian cooking: cured pork jowl that brings a rich, savory depth to dishes like carbonara and amatriciana. Its delicate fattiness melts into the polenta, creating a flavor base that’s both rustic and refined. We finish the plate with a tangy sour cream and mustard sauce that brightens every bite.
And speaking of jumping and jiving… ever heard of “Jump, Jive an’ Wail”? Louis Prima’s iconic swing anthem from the late 1950s is pure energy—just like this dish.
