This weekend, weāre pulling out all the stops with a special thatās bold, briny, and absolutely indulgent: Seared Head-on Gulf Shrimp lounging atop Linguine Carbonara, with shallots, sage, Parmesan, and the piĆØce de rĆ©sistanceāguanciale. (Whatās guanciale? Think baconās cooler Italian cousin, made from cured pork jowl and packed with umami goodness.)
Carbonara itself has some deliciously debated origins, but most roads lead to Romeāwhere this creamy, silky pasta became an icon of simple, satisfying decadence. Pair it with a crisp white like Arneis or Orvieto, or go rich with a Barbera, if youāre feeling bold.
Of course, balance is key, so start fresh with our paired Watermelon, Mint, Feta & Sumac Salad, because summer vibes are approaching, and weāre ready.

And because May is the gateway to summer, our Dessert of the MonthĀ is a true seasonal superstar: Strawberry Shortcake, featuring Fresh Strawberry Compote over Homemade Pound Cake Crumbles, topped with Fresh Whipped Cream. Basically, happiness in dessert form.
