As we begin our descent from May madness into the steamy days of summer, we have one more weekend to round out this month of milestones. If you haven't had the chance to celebrate yet, now is your time to indulge with Chef Kanen's crispy-skin pork shank nestled in creamy roasted garlic mashed potatoes with a red wine reduction. Whether you have a graduate who's basking in the results of long years of work, or a teacher or student savoring those last days before sweet summer freedom, this is a dish that's made for making memories.

And since we love to give you the full food-and-wine experience, let's talk about the perfect wine pairing for this entree. It's one we've all heard of - good ole Chianti. But the Chianti we pour isn’t just any Chianti. It’s Chianti Classico, and if you’ve ever wondered what makes it special, gather 'round a moment while we explain!

Regular Chianti wine production stretches over a wide stretch of land spanning six Tuscan regions. Chianti Classico, however, comes only from the original zone between Florence and Siena, an area officially designated for Chianti production back in the 1700s. This historic region sits at higher elevations, giving the wines brighter freshness and firmer structure. It’s also geographically tighter, which means the wines more consistently express the character of that unique climate. Combine this with stricter production rules within the region and you have the brilliance of Chianti Classico - a more complex wine with balanced acidity, herbal aromatics and firmer tannins that is a worthy companion to your meal.

When it comes to Chianti Classico, look for the black rooster! The gallo nero seal signifies that the winemaker adheres to the strict wine laws applied to Chianti Classico production. You can find Chianti Classico both by the glass and bottle at Antoni's. Just ask your server for a taste of Gabbiano, or splurge on a bottle of Volpaia - you won't regret either of those choices!
