Can you feel it? There's a slight touch of fall in the air, and we are sooooo here for it.
Someone asked us the other day if we are ready for the upcoming cool front and we said, "We'll believe it when we feel it." Well, let me say it doesn't take much to put a little dry air back in our sails. We now can believe that fall is, in fact, around the corner.
This is also the weekend of the full harvest moon, just in time for some slightly cooler weather to make our patio the best-seat-in-town yet again. Embrace the spirit of fall harvest with tender, slow-braised rabbit set over white beans flavored with Italian sausage, sundried tomatoes and sage. Rabbit is a traditional option in rustic northern Italian cuisine, and this dish is inspired by those regional culinary customs such as rabbit cacciatore and rabbit ragu. The slow-simmered white beans soak in all the flavor of the Italian sausage and sundried tomatoes, providing just the right accompaniment to the slowly braised rabbit.

Try it with a northern Italian wine such as Masi Valpolicella Classico, made from the classic Valpolicella blend of Corvina, Rondinella and Molinara grapes. From the opposite side of northern Italy, enjoy the vibrantly acidic, juicy flavor profile of Barbera d'Asti. Either wine will complement the tender rabbit without overpowering the complex flavors developed in the white beans.
Now remember to save room for dessert, because it is the final weekend to enjoy the September dessert of the month, Amaretto Zabaione.
