What a whirlwind of a week we've had! Halloween, time change, Election Day... it's a lot! Did we gain an hour, or did we gain just a lot of humidity?
We may be in store for some more stormy weather, but luckily we've saved this special for a rainy day! ☔️
Chef David is preparing a bright and delicious vodka sauce for you with tender pappardelle noodles and a fresh fillet of swordfish. Have you tried vodka sauce before? The first thing to note is that the vodka is completely cooked out during preparation. And while some historians differ over its origins, it is a distinctly Italian sauce that uses vodka to help caramelize and emulsify tomatoes for a silky sauce with delightful aromatics. 🍝🐟
You have lots of options for wine pairing with this dish, but we suggest an Italian varietal like Orvieto which has notes of crisp green apple to balance the dish. For a red selection, we love a juicy Barbera or even a glass of Lambrusco for an adventurous pairing.
