This week marks the beginning of school for many kids in Acadiana, signaling the end of

summer fun. But for the rest of us, it’s still aestivus (derived from the Latin word for “summer”), and we’re in a bona fide heat wave. As Glenn Frey famously sang, “The Heat is On” 🔥, and I think of that song every time I open the door.


Accordingly, we’re keeping our weekend special light yet satisfying, and boy, do we have a good one for you. I know, I say that every time. But hear out my Romesco manifesto! 🗣


🌶️ Romesco is a traditional Spanish sauce made with charred tomatoes and roasted red peppers, puréed and thickened with toasted almonds and bread. Chef David has put his own spin on it, using pecans instead of almonds and our homemade Focaccia bread. On the side, he’s paired succulent cakes made of roasted cauliflower and garlic, honey goat cheese, lemon zest, and a bit of egg and flour. While we all know grouper can stand on its own, dare I say the cauliflower cakes are the star of the show? 🌟 You’ll have to taste it and see! The charred red pepper Romesco perfectly complements the cauliflower, and while it has a strong flavor, it doesn’t overpower the fish. 🐟
